Hénaff’s recipe for pork rillettes couldn’t be simpler: 90% pork meat, sea salt, pepper and a long, slow cooking time. The end result? An incomparably smooth texture.

At room temperature. This simple dish of rillettes is perfect served on a slice of fresh bread. Serve at room temperature to bring out the full taste. The rillettes will be full of flavour with a melt-in-the-mouth texture. Lastly, store the rillettes in a cool place, out of the light.
